Cards Envelopes

What are creative ways to give volunteer hours for people who are addressing envelopes and signing cards?
Because this type of volunteering is very tedious and more than likely not going to last several hours at a time, I was hoping that someone could suggest a way for me to encourage these volunteers by also rewarding their hard work. I hope that isn’t too confusing. 
While they are working, it would be nice to provide pop or coffee to drink and maybe a snack.
Be sure to tell them “Thank you” as that is the one complaint I hear a lot from volunteers — no one ever told them “thanks”.
